500g chicken mince
4 garlic cloves, crushed
Zest of 1 lemon
1 large handful of fresh mint, chopped
1/2 tsp dried cumin
1 tsp paprika
1 tsp salt
1/4 tsp black pepper
1 tsp onion powder
80g feta, crumbled
1 tsp olive oil - to fry
1 large cucumber, diced into chunks
1 punnet of cherry tomatoes, halved
Handful of fresh mint, chopped
3x microwave white rice quick cups
Juice of Lemon
To make the meatballs, mix all the meatball ingredients together in a large bowl (apart from the olive oil).
Use your hands to combine the mixture together and shape into meatballs.
Heat a large pan over a medium-high heat with the olive oil and cook for 3-4 minutes on each side or until golden and cooked through.
*Alternatively, bake the meatballs in an air-fryer or oven at 200°C for 15-20 minutes.
To assemble the bowls, serve the meatballs, cucumber, mint and tomato over the rice.
Drizzle over the tzatziki and squeeze over the lemon juice.
Season with additional salt and pepper to taste.
