Two-Ingredient Mango Ice Cream with Toasted Coconut

This 2-ingredient mango coconut ice cream is unbelievably simple to whip up. It's vegan-friendly, and packed with dietary fibre for a happy healthy gut, as well as vitamin C and A. Top it with toasted coconut to take it to the next level!

Ingredients

Ice cream

1.5kg frozen mango
1 1⁄2 cup coconut milk


Toasted coconut

Shredded coconut

 

Method

Ice cream:

Blend ingredients for ice cream together in a food processor until smooth.

You may need a spatula to scrape down the sides a few times.

 

Toasted coconut:

Heat a small frying pan over a low heat.

Add toasted coconut and heat until brown.

Serve ice cream with a spoon of toasted coconut!
